This make it a very versatile food source indeed, I could keep a packet in the car glove box for when im peckish and stuck in a traffic jam, instead of sitting there dreaming about it, I could be eating it Razz

Hello,

I have just read a section on jerky in an old book about food drying.

The author recommended storing dried meats in the freezer - saves space and extends the storage life.

Just wondered if you had ever tried this?

(It seems like nobody is able to resist it for that long anyway!)

Yes, we tried to freeze it but I would say freezing is rather useful for storing bulk packed dried meats for emergency food reserves, i.e., military and such. Ours is sold out quite fast Very Happy
But you can deep freeze it for a longer storage, that's true. For example, Norwegians dry cod up north by simply freezing it outside in a cold windy winter.

does refrigerating it do anything?
i glad it lasts so long as i now pop a bag into my work bag incase of those late munchie sessions when i finish work at 2 am

jerky has a very low water activity "aw" so there is no need for refrigeration. But once bag is opened, it's better to consume it within a week or so. If one keeps bag semi closed it might trigger a growth of mold, if one takes jerky out of its bag and leave out in the open air then it's gonna dry out.
